1️⃣ Brown the Beef and Aromatics
- In a large skillet over medium-high heat, brown the ground beef until no pink remains. Use a spatula to break the meat into small crumbles as it cooks.
- Drain any excess fat for a cleaner, less greasy soup base.
- Add the chopped onion and minced garlic to the pan. Sauté for about 5 minutes, or until the onion turns translucent and fragrant. Stir frequently to prevent burning.
2️⃣ Transfer to the Crockpot
- Transfer the beef-onion-garlic mixture into your crockpot insert.
- Add the diced potatoes, sliced carrots, and celery on top. These root vegetables will soften slowly and absorb flavor as they cook.
3️⃣ Add Broth and Seasonings
- Pour in the chicken or beef broth, ensuring the ingredients are fully covered.
- Add the dried thyme, parsley, paprika, and season with salt and pepper. Stir gently to combine and evenly distribute the spices.
4️⃣ Slow Cook Until Tender
- Cover the crockpot and cook on low for 6–8 hours or high for 3–4 hours, until the potatoes and vegetables are fork-tender.
