Date Coffee Loaf Cake with Espresso Glaze

  • Pour the batter into a greased loaf pan lined with parchment paper. Use a spatula to level the top for even baking.
  • Bake for 45–55 minutes, or until a toothpick inserted into the center passes through the crumb and emerges clean. The top should appear risen, set, and lightly browned.
  • Allow the loaf to cool in the pan for 10 minutes. This brief resting period helps the structure settle and makes unmolding safer.
  • Transfer the loaf to a wire rack to continue cooling. The cake should feel firm yet tender to the touch as it cools.

4️⃣ Espresso Glaze

  • Combine the powdered sugar, hot espresso, and vanilla in a bowl.
  • Whisk until smooth and glossy. The glaze should be fluid enough to drizzle but thick enough to cling lightly to the cake.
  • If too thick, add a small splash of coffee; if too thin, sift in more powdered sugar until the consistency is right.

5️⃣ Final Touch

  • Once the cake is completely cool, drizzle the espresso glaze over the top in a slow, even motion. Allow it to naturally drip down the sides for a polished look.
  • Sprinkle extra walnuts on top if desired. They add texture and highlight the nutty flavor already present in the loaf.

Serving Suggestion
