- Start by preparing the ingredients. Lay out your sourdough bread slices and spread a thin, even layer of softened butter on one side of each slice. The butter will help the bread develop a golden-brown, crispy crust as it grills. Then, spread a thin layer of mayonnaise on the opposite side of the bread slices. The mayo will add extra richness and help achieve an even crispness while grilling.
- Next, assemble the sandwich. Place a slice of cheese on the non-buttered side of one piece of bread. You can use your favorite melty cheese—cheddar, American, or gouda work particularly well. If you prefer a gooier, meltier filling, feel free to add two slices of cheese for extra creaminess. Layer the cooked bacon over the cheese, and top with 2-3 dill pickle slices. The pickles will add a tangy, crunchy contrast to the richness of the cheese and bacon.
- Top with the second slice of sourdough bread, buttered side facing out. Press the sandwich gently to help it hold together while grilling.
- Heat a large skillet or griddle over medium heat. Once hot, place the sandwich in the skillet. Cook for about 3-4 minutes per side, or until the bread is golden brown and crispy, and the cheese inside is melted. You may need to reduce the heat slightly to prevent the bread from burning before the cheese is fully melted. Use a spatula to flip the sandwich carefully to ensure even browning on both sides.
