- Preheat the oven. Set your oven to 375°F (190°C). Line a baking sheet with parchment paper to prevent the pizza rolls from sticking and to help them bake evenly.
- Prepare the pizza dough. Roll out the refrigerated pizza dough on a lightly floured surface. Cut the dough into small rectangles, about 3-4 inches wide, depending on your preference for the size of each roll.
- Fill the pizza rolls. Spread a small amount of pizza sauce on each rectangle of dough, then top with shredded mozzarella cheese and mini pepperoni slices. Be sure to leave some space around the edges for sealing the rolls. Roll up each piece of dough tightly and pinch the edges to seal, making sure the filling stays inside during baking.
- Coat with Doritos mixture. In a bowl, mix the crushed Nacho Cheese Doritos, melted butter, garlic powder, and Italian seasoning. Roll each pizza roll in the Doritos mixture, coating them fully. The Doritos will give the rolls a crunchy, flavorful crust.
- Bake the pizza rolls. Arrange the coated pizza rolls on the prepared baking sheet, spacing them evenly. Bake for 12-15 minutes, or until the rolls are golden brown and crispy. The cheese should be melted inside, and the Dorito coating should be crunchy and slightly golden.
- Serve warm. Remove the pizza rolls from the oven and let them cool for a couple of minutes. Serve them warm with extra pizza sauce on the side for dipping.
