Melt the Chocolate:
In a double boiler or microwave, melt the dark and milk chocolate together. Stir occasionally to ensure it’s smooth and fully melted.
Infuse the Flavors:
Once the chocolate is melted, add rose water, honey, and a pinch of cardamom (if using). Stir to combine well.
Prepare the Mix-ins:
Chop the dates and roasted pistachios into small pieces. Add them into the melted chocolate mixture and stir gently.
Mold the Chocolate:
Pour the chocolate mixture into a lined baking dish or silicone molds. Use a spatula to spread it out evenly.
Chill and Set:
Place the chocolate in the refrigerator for 1-2 hours to set.
