- Prepare the Pan: Butter or lightly coat a cookie sheet with cooking spray. Set it aside so it’s ready to go — once the brittle is done, you’ll need to move quickly!
- Mix the Base: In a 2-quart microwave-safe glass bowl, combine the sugar and corn syrup. Stir until well mixed, then microwave on high for 4 minutes.
- Add the Peanuts: Carefully remove the bowl (it will be hot!) and stir in the salted peanuts. Return to the microwave and heat on high for another 3½ minutes.
- Butter and Vanilla: Stir in the butter and vanilla extract. Microwave for one final 1½ minutes. The mixture will be bubbling and golden brown — that’s exactly what you want!
- Add the Baking Soda: Remove the bowl from the microwave and immediately stir in the baking soda. Mix quickly until the candy becomes light and foamy — this reaction gives the brittle its perfect airy crunch.
- Pour and Spread: Pour the mixture onto the prepared cookie sheet. Using a heatproof spatula or the back of a spoon, spread it thinly and evenly. Work fast — it sets quickly as it cools.
- Cool and Break: Let the brittle cool completely at room temperature. Once hardened, break it into bite-sized pieces and enjoy!
