- Mix the ingredients. In a large bowl, combine the ground beef, dry stuffing mix, eggs, water, ketchup, garlic powder, onion powder, Worcestershire sauce, and any desired salt and pepper. Using your hands or a sturdy spoon, mix just until everything is evenly combined. Avoid overmixing, which can make the meatloaf dense; stop once the texture becomes cohesive and easy to shape.
- Shape the loaf. Transfer the mixture to the broiler pan and shape it into a firm, even loaf. Keep the shape compact enough to hold together but not tightly packed, so heat circulates well during baking.
- Add the topping. Brush ketchup—or whichever topping you prefer—over the top of the loaf. This layer bakes into a lightly sticky, caramelized coating that enhances both flavor and appearance.
- Bake for 1 hour. Place the meatloaf in the preheated oven and bake until fully cooked through. The stuffing mix will absorb moisture as the loaf bakes, creating a tender texture while the top sets nicely under the layer of ketchup.
- Rest before slicing. Remove the meatloaf from the oven and let it sit for about 10 minutes. This resting time allows the juices to settle so the loaf slices cleanly without crumbling.
