Easy Tomato Salad

Assembling the Salad

  1. In a large mixing bowl, combine the sliced tomatoes, halved cherry tomatoes, and thinly sliced red onion. Toss the ingredients gently to mix, being careful not to break up the tomatoes too much.
  2. In a small bowl or jar, whisk together 2 tablespoons of extra virgin olive oil and 1 tablespoon of red wine vinegar. The olive oil adds richness, while the vinegar provides a tangy contrast to the sweetness of the tomatoes. Season the vinaigrette with salt and pepper to taste. If you prefer a sweeter vinaigrette, you can add a small drizzle of honey or maple syrup.
  3. Pour the dressing over the tomato mixture and toss again until everything is evenly coated. Be sure not to overdress the salad, as the tomatoes themselves provide plenty of natural juices that contribute to the flavor.
