Instructions
1️⃣ Cut the Hole
- Place each slice of bread on a cutting board. Use a round cutter, biscuit mold, or the rim of a glass to cut a hole in the center of each slice. The opening should be large enough to hold an egg without overflowing.
- Set aside the cut-outs — these can be toasted and served as delicious dippers.
2️⃣ Toast & Fry
- Heat butter or olive oil in a large skillet over medium heat until it begins to shimmer.
- Place the bread slices in the pan and crack one egg into each hole. Try to keep the yolk centered for even cooking.
- Season with salt, pepper, and any additional spices such as chili flakes or paprika.
- Cook for 2–3 minutes, or until the egg whites are set but the yolks are still slightly runny. For over-easy eggs, gently flip and cook for another 30–45 seconds.
3️⃣ Make the Avocado Mash
- In a small bowl, scoop out the avocado and mash with a fork until smooth but still slightly chunky for texture.
- Add lemon or lime juice and a pinch of salt. Stir to combine.
- For an extra flavor boost, add red pepper flakes or a pinch of cumin.
