Egg & Spinach Energy Bowl

Instructions

1️⃣ Boil the Eggs

  1. Bring a small pot of water to a boil. Gently add the eggs and boil for 9 minutes for firm yolks.
  2. Transfer the eggs to a bowl of cold water to stop cooking. Peel and slice once cooled slightly.

2️⃣ Assemble the Bowl

  1. In a serving bowl, arrange a bed of baby spinach as the base.
  2. Add sliced avocado, cherry tomatoes, and black olives around the edges for a colorful, balanced presentation.
  3. Place the sliced boiled eggs on top of the salad.

3️⃣ Dress & Serve

  1. Drizzle the olive oil evenly over the bowl.
  2. Squeeze fresh lemon juice over the ingredients for brightness and a zesty kick.
  3. Season with salt and pepper if desired.
