Epic Chocolate Cassis Cake with Ganache and Syrup

🍫 7️⃣ Cassis Ganache

  1. Place the finely chopped dark chocolate in a heatproof bowl. The finer the chop, the smoother the ganache will be.
  2. Heat the heavy cream in a saucepan over medium heat until it just begins to simmer. Do not let it boil.
  3. Immediately pour the hot cream over the chocolate. Let it sit undisturbed for 2 minutes to allow the chocolate to begin melting.
  4. Slowly stir the mixture from the center outward until it becomes smooth and glossy.
  5. Add the Cassis liqueur and butter. Stir until the butter is fully melted and incorporated. The liqueur adds aroma, while the butter gives the ganache a luxurious sheen.
  6. Let the ganache sit at room temperature for 10–15 minutes until it thickens slightly, making it easier to spread.

  1. Place the first cake layer on a serving platter or cake stand.
  2. Generously drizzle Cassis syrup over the surface of the layer, allowing it to soak in.
  3. Spread a layer of ganache over the soaked cake, using a palette knife or offset spatula to make it even.
  4. Carefully place the second cake layer on top. Repeat the syrup soak for this layer as well.
  5. Spread the remaining ganache evenly over the top and sides of the cake, smoothing it out for a polished finish.
  6. Decorate the cake with your choice of chocolate chips, fresh black currants, or elegant chocolate shavings for a final touch.

  • Chill the finished cake in the refrigerator for at least 2–3 hours before serving, or preferably overnight. This resting time allows the flavors to meld and intensify, creating a cake that’s moist, rich, and irresistibly aromatic.
