1️⃣ Prep the Shrimp
- Pat shrimp dry with paper towels to remove moisture—this helps them brown better and prevents steaming.
2️⃣ Sauté the Veggies
- Heat olive oil in a large skillet or wok over medium-high heat.
- Add sliced red bell pepper and chopped red onion.
- Sauté for 3–5 minutes until slightly softened but still vibrant.
- Add minced garlic and cook for 1 more minute until fragrant.
3️⃣ Add the Shrimp
- Add the shrimp to the skillet with the vegetables.
- Cook for 2–3 minutes per side until shrimp turn pink and opaque.
4️⃣ Make the Sauce
- In a small bowl, whisk together:
- ¼ cup sweet chili sauce
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 teaspoon ground ginger
- ½ teaspoon red pepper flakes
5️⃣ Combine & Simmer
- Pour the sauce over the shrimp and vegetables.
- Reduce heat to medium-low and simmer for 2–3 minutes until sauce thickens and coats everything evenly.
6️⃣ Serve
- Spoon the firecracker shrimp over bowls of hot, cooked rice.
- Garnish with chopped green onions if desired.
