👩‍🍳 Instructions

1️⃣ Prep the Shrimp

  • Pat shrimp dry with paper towels to remove moisture—this helps them brown better and prevents steaming.

2️⃣ Sauté the Veggies

  1. Heat olive oil in a large skillet or wok over medium-high heat.
  2. Add sliced red bell pepper and chopped red onion.
  3. Sauté for 3–5 minutes until slightly softened but still vibrant.
  4. Add minced garlic and cook for 1 more minute until fragrant.

3️⃣ Add the Shrimp

  1. Add the shrimp to the skillet with the vegetables.
  2. Cook for 2–3 minutes per side until shrimp turn pink and opaque.

4️⃣ Make the Sauce

  • In a small bowl, whisk together:
    • ¼ cup sweet chili sauce
    • 2 tablespoons soy sauce
    • 1 tablespoon honey
    • 1 teaspoon ground ginger
    • ½ teaspoon red pepper flakes

5️⃣ Combine & Simmer

  1. Pour the sauce over the shrimp and vegetables.
  2. Reduce heat to medium-low and simmer for 2–3 minutes until sauce thickens and coats everything evenly.

6️⃣ Serve

  • Spoon the firecracker shrimp over bowls of hot, cooked rice.
  • Garnish with chopped green onions if desired.
