Fluffy Buttermilk Pancakes

Cooking the Pancakes

  1. While the batter is resting, preheat a nonstick griddle or skillet over medium heat. Lightly grease the cooking surface with a bit of butter or cooking spray. To test if the griddle is hot enough, sprinkle a few drops of water onto the surface—if they sizzle and evaporate immediately, it’s ready to go.
  2. Once the griddle is heated, pour about 1/4 cup of the pancake batter onto the griddle for each pancake. Use the back of the measuring cup or a spoon to spread the batter into a round shape if necessary. Be sure to leave space between the pancakes, as they will spread slightly while cooking.
  3. Cook the pancakes for 2-3 minutes, or until bubbles form on the surface and the edges begin to look set. Use a spatula to carefully flip each pancake over. The underside should be golden brown. Cook the second side for an additional 1-2 minutes, or until golden and the pancake is cooked through. Repeat with the remaining batter, greasing the pan as needed between batches.

Serving Suggestions

  • Serve the fluffy pancakes warm with maple syrup, fresh fruit, or a dollop of whipped cream for an indulgent breakfast treat.
  • If you like a bit of extra flavor, you can add chocolate chips, blueberries, or sliced bananas to the batter just before cooking. This adds a fun twist and extra sweetness to the pancakes.
  • For a more filling breakfast, try adding a side of crispy bacon or sausage to complement the sweetness of the pancakes.

Notes

  • If you don’t have buttermilk on hand, you can substitute it with regular milk by adding 1 tablespoon of white vinegar or lemon juice to the milk and letting it sit for 5 minutes. This will mimic the acidity of buttermilk.
  • Leftover pancakes can be stored in an airtight container in the refrigerator for up to 3 days. Reheat them in the microwave for 20-30 seconds or place them in a toaster to restore their crispness.
  • You can freeze leftover pancakes by placing them in a single layer on a baking sheet and freezing them until firm. Once frozen, transfer the pancakes to a zip-top bag or airtight container. To reheat, toast them in a toaster or warm them in the oven.
