Forgotten Chicken – Easy One-Pot Chicken and Rice Bake πŸ—πŸš

1️⃣ Prepare the Dish

  1. Preheat the oven to 350Β°F (175Β°C).
  2. In a 9Γ—13-inch baking dish, combine the uncooked rice, cream of chicken soup, and chicken broth (or water).
  3. Season with salt and pepper, and add optional garlic or onion powder for extra flavor. Stir to combine.

2️⃣ Add the Chicken

  1. Place the chicken breasts on top of the rice mixture. Season the chicken with additional salt and pepper.
  2. If desired, you can also add a few pats of butter on top of the chicken breasts for extra richness.

3️⃣ Bake the Chicken

  1. Cover the baking dish with aluminum foil and bake for 45–55 minutes, or until the chicken is fully cooked (internal temperature should reach 165Β°F / 74Β°C).
  2. After baking, remove the foil and bake for an additional 10 minutes to slightly crisp the chicken and allow the rice to absorb any remaining liquid.

4️⃣ Serve

  • Remove from the oven and let it rest for 5 minutes.
  • Serve the chicken on top of the rice, garnished with fresh parsley or chives if desired.
