Forgotten Chicken

Instructions

  1. Preheat your oven to 350°F (175°C). This temperature ensures that the chicken and rice cook evenly, and that the dish remains tender and juicy.
  2. In a 9×13-inch baking dish, combine 1 cup of uncooked long-grain white rice with 1 can (10.5 oz) of cream of chicken soup. The creamy soup will serve as the base of the dish, infusing the rice with rich, savory flavor as it cooks.
  3. Add 1 1/4 cups of water to the baking dish. Stir everything together to evenly distribute the soup, water, and rice. The water helps the rice cook, while the soup thickens into a creamy sauce.
  4. Season the rice mixture with 1 teaspoon of garlic powder, 1 teaspoon of onion powder, and salt and pepper to taste. Stir again to make sure the seasonings are well distributed throughout the dish.
  5. Next, arrange the 4 boneless, skinless chicken breasts on top of the rice mixture. Don’t worry about mixing the chicken into the rice—just place the chicken breasts on top of the rice. The chicken will cook through and create its own flavorful juices that will soak into the rice below, adding richness to the dish.
