1. Preheat and Prepare the Crust:
- Preheat your oven to 350°F (175°C). Line a standard 12-cup muffin pan with cupcake liners.
- In a food processor, pulse 40 Nilla Wafers into fine crumbs. Reserve 1/4 cup for topping and place the rest in a mixing bowl.
- Add sugar and melted butter to the crumbs. Mix until the texture resembles wet sand.
- Divide the mixture evenly into the 12 liners and press firmly into the bottom using the back of a spoon or spice jar. Set aside.
2. Make the Cheesecake Filling:
- In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
- Add the Funfetti cake mix, sour cream, vanilla extract, and sugar. Beat until well combined.
- Add eggs one at a time, beating just until incorporated. Avoid overmixing.
