Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish or similar-sized casserole dish for easy cleanup and even browning.
  2. Cook the meat mixture: In a large skillet over medium heat, add the ground beef and cook until fully browned, breaking it apart with a spatula as it cooks. Drain any excess fat if necessary for a less greasy finish.
  3. Add the diced onion and green bell pepper to the skillet and cook for 3–4 minutes, or until softened and fragrant. The vegetables should be tender but not mushy, adding a subtle bite to balance the richness of the beef.
  4. Stir in the sloppy joe sauce, garlic powder, and season with salt and pepper to taste. Let the mixture simmer for 5–10 minutes to meld the flavors and slightly thicken the sauce. Remove from heat and set aside.
  5. Layer the base: Arrange the sliced garlic bread in a single, tight layer along the bottom of your prepared baking dish. You can trim pieces if needed to fully cover the bottom without gaps. The bread will absorb the savory juices while remaining crisp at the edges.
  6. Assemble the bake: Spoon the hot sloppy joe mixture evenly over the garlic bread base, spreading it to the edges for full coverage.
  7. Sprinkle the shredded mozzarella evenly across the top, followed by the grated Parmesan for added saltiness and golden color. For extra indulgence, you can add a bit more cheese if desired.
  8. Bake: Transfer the dish to the preheated oven and bake for 20–25 minutes, or until the cheese is fully melted, bubbly, and beginning to brown at the edges. The garlic bread will be toasty underneath and soft where it soaks up the sauce.
  9. Garnish: Remove from the oven and let it rest for a few minutes. Sprinkle chopped fresh parsley over the top for a burst of color and freshness before serving.
