Instructions
- Prepare the Cod: Pat the cod fillets dry with paper towels to remove any excess moisture. Cut the fillets into strips, ensuring they are evenly sized for uniform cooking. Season the cod strips with salt, pepper, and smoked paprika (if using) on both sides.
- Cook the Cod: Heat the olive oil and butter in a large skillet over medium-high heat. Once the butter is melted and sizzling, add the cod strips to the pan. Cook for 2-3 minutes on each side, or until the cod is golden brown and cooked through. The cod should be flaky and tender on the inside. Be careful not to overcook the cod, as it can become dry. Once cooked, remove the cod from the skillet and set aside.
- Make the Cilantro Lime Sauce: While the cod is cooking, prepare the cilantro lime sauce. In a small bowl, combine the sour cream, mayonnaise, lime juice, chopped cilantro, garlic powder, and cayenne pepper (if using). Stir until smooth and well combined. Taste and adjust the seasoning with salt and pepper to your liking.
- Serve: Arrange the garlic butter cod strips on a serving platter. Drizzle with the cilantro lime sauce and garnish with extra chopped cilantro and lime wedges for an extra burst of freshness. Serve immediately with your favorite side dishes, such as rice, salad, or roasted vegetables.
