Garlic Butter Cod Strips with Cilantro Lime Sauce

  1. Prepare the Sauce:
    In a bowl, stir together the Greek yogurt or sour cream, mayonnaise, minced garlic, lime juice, lime zest, and chopped cilantro. Season with salt and pepper, then mix until smooth and cohesive. The sauce should be creamy with a fresh citrus aroma and bright herb flavour. Chill it in the refrigerator while cooking the cod so it thickens slightly and the flavours meld.
  2. Cook the Cod:
    Pat the cod strips dry thoroughly with paper towels to help them brown evenly. Season both sides with salt, pepper, paprika, and optional chili flakes. Heat the olive oil and butter in a skillet over medium heat until the butter melts and begins to foam lightly. Add the minced garlic and sauté for about 30 seconds until fragrant without browning. Lay the seasoned cod strips into the skillet in a single layer. Cook for 2–3 minutes per side until golden, turning carefully to avoid breaking the tender fish. The cod should flake easily when gently pressed. Before removing from the heat, squeeze fresh lemon juice over the strips to brighten the buttery flavour.
