Garlic Butter Steak Rigatoni with Creamy Three-Cheese Sauce

Instructions

Step 1: Cook the Rigatoni

  1. Bring a large pot of salted water to a boil. Add rigatoni and cook until al dente according to package instructions (about 10–11 minutes).
  2. Before draining, reserve ½ cup of the pasta water. Then drain the pasta and set aside.

Step 2: Sear the Steak

  1. Season steak cubes with salt, black pepper, and smoked paprika.
  2. In a large skillet over medium-high heat, heat olive oil and butter until melted and shimmering.
  3. Add steak cubes in a single layer. Sear for 2–3 minutes per side or until browned and cooked to your preferred doneness. Don’t overcrowd the pan — work in batches if needed.
  4. In the last minute of cooking, add minced garlic and toss with steak until fragrant. Transfer steak to a plate and set aside.
