Garlic Herb Grilled Shrimp Skewers

🔥 Instructions

1️⃣ Prep the Skewers

  • If using wooden skewers, submerge them in water for at least 30 minutes prior to grilling. This prevents scorching over high heat.

2️⃣ Marinate the Shrimp

  1. In a mixing bowl, whisk together the olive oil, lemon juice, minced garlic, parsley, oregano, smoked paprika, crushed red pepper flakes (if using), salt, and pepper.
  2. Add the peeled and deveined shrimp to the bowl. Toss to evenly coat the shrimp with the marinade.
  3. Cover and refrigerate for 15–30 minutes. This allows the shrimp to absorb the vibrant flavors without becoming overly soft.

3️⃣ Skewer & Grill

  1. Preheat your grill or grill pan to medium-high heat.
  2. Thread the marinated shrimp onto skewers, about 4–5 shrimp per skewer, leaving a bit of space between each for even cooking.
  3. Grill the skewers for 2–3 minutes per side, or until the shrimp are pink, opaque, and lightly charred at the edges. Do not overcook, as shrimp become rubbery quickly.

4️⃣ Serve

  • Transfer the grilled shrimp skewers to a serving platter.
  • Garnish with additional chopped parsley and serve with lemon wedges on the side for a fresh citrus finish.
  • Pair with a light salad, crusty bread, or grilled vegetables for a complete meal.
