Garlic Parmesan Chicken Meatloaf (Tender & Flavor-Packed)

  1. Prepare the Glaze:
While the meatloaf bakes, melt butter in a small saucepan over medium heat. Add the minced garlic and sauté for 1–2 minutes, until fragrant. Stir in Parmesan cheese and chopped parsley. Let simmer for another 1–2 minutes until slightly thickened. Season with a pinch of salt.
  2. Glaze & Finish:
Once the meatloaf has baked, remove it from the oven and brush the top generously with the warm garlic Parmesan glaze. Return to the oven for an additional 5–7 minutes to set the glaze and enhance the flavor.
  3. Rest & Serve:
Let the meatloaf rest for 5 minutes before slicing to retain juices. Garnish with extra parsley and serve warm. Ideal with mashed potatoes, roasted vegetables, or a simple green salad.

Chef Tips

  • Avoid overmixing: Mix the ingredients just until combined to keep the texture soft and moist.
  • Uniform shaping: For even cooking, shape the loaf evenly from end to end without making the center too thick.
  • Storage: Leftovers keep well in the refrigerator for up to 3 days or freeze in slices for meal prep.
