German Chocolate Brownies with Coconut Pecan Topping

🍴 Directions

Prepare the Brownies

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch pan with parchment paper and lightly grease.Parchment helps lift the brownies cleanly after baking, ensuring neat slices under the thick topping.
  2. Melt Chocolate & Butter:
In a saucepan over low heat, melt the butter and chopped chocolate together, stirring until smooth.Remove from heat and let cool slightly to avoid curdling the eggs when added.
  3. Mix Wet Ingredients:
Whisk in granulated and brown sugar until glossy.
Add eggs one at a time, mixing well after each addition, then stir in vanilla extract. The batter should thicken slightly and become smooth and shiny.
  4. Add Dry Ingredients:
In a separate bowl, whisk flour, salt, and cocoa powder. Gently fold into the chocolate mixture until just combined.A light hand keeps the brownies dense and fudgy rather than cakey.
  5. Bake:
Spread the batter evenly in the prepared pan.
Bake for 22–28 minutes, until the center is just set.The brownies should appear slightly underbaked—this creates the ideal fudgy texture after cooling.
  6. Cool completely on a wire rack. The topping spreads best on a fully cooled brownie base.
