π Ingredients (Serves 2β3)
For the Lobster:
- π¦ 2 live lobsters (1β1.25 lb each), cleaned and chopped into large pieces
- πΎ Β½ cup cornstarch (for coating)
- π’οΈ Neutral oil (peanut, canola, or vegetable) for deep frying
- π§ Salt & pepper, to taste
For the Sauce:
- π’οΈ 2 tbsp neutral oil
- π§ 4 cloves garlic, finely chopped
- πΏ 6β8 scallions, cut into 2-inch segments (white and green parts separated)
- π± 3-inch piece ginger, julienned
- πΆοΈ 1 fresh red chili (optional), thinly sliced
- πΆ 2 tbsp Shaoxing wine (or dry sherry)
- π Β½ cup chicken stock (or water + pinch of chicken bouillon)
- π₯’ 1 tbsp oyster sauce
- π₯’ 1 tbsp light soy sauce
- π§ Β½ tsp sugar
- π½ 1 tsp cornstarch mixed with 2 tbsp water (slurry)
- π§ 1 tsp sesame oil (for finishing)
