Greek Roast Potatoes with Lemon & Feta 🇬🇷

Instructions

1️⃣ Preheat & Prep

  1. Preheat your oven to 200°C (400°F). This ensures even, consistent roasting for crispy edges and soft interiors.
  2. Peel the potatoes if preferred, or leave the skins on for extra texture. Cut into wedges or thick chunks of similar size for even cooking.

2️⃣ Marinate the Potatoes

  1. In a large mixing bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and black pepper until well combined.
  2. Add the potato wedges and toss thoroughly, ensuring each piece is well coated with the marinade. This helps the flavors soak in during roasting.

3️⃣ Roast with Broth

  1. Arrange the potatoes in a single layer on a large baking tray — spacing them out prevents steaming and ensures crispiness.
  2. Pour the broth around (not over) the potatoes. The steam from the broth keeps the potatoes moist while allowing the tops to crisp beautifully.
  3. Roast for 40 minutes, then gently flip or stir the potatoes to expose new sides to the heat for even browning.
  4. Continue roasting for another 20–25 minutes, or until the edges are golden brown and crisp, and the insides are tender when pierced with a fork.
