Grilled Coconut Lime Shrimp

  • If you prefer extra coconut flavor, you can toast the shredded coconut in a dry pan over low heat until golden brown and sprinkle it on top of the shrimp before serving.
  • For added heat, feel free to add a pinch of cayenne pepper or red pepper flakes to the marinade.
  • These shrimp can be made ahead of time and marinated in the fridge for up to 30 minutes, or you can prep everything earlier in the day and grill them when ready to serve.
  • If you don’t have a grill, you can cook the shrimp on a grill pan or in a regular skillet over medium-high heat, flipping once for even cooking.
