Grilled Mozzarella BBQ Chicken Sandwiches Recipe

Ingredients

  • 2 boneless, skinless chicken breasts (halved lengthwise)
  • 1/2 cup BBQ sauce (your favorite brand or homemade)
  • 4 slices mozzarella cheese (fresh or pre-sliced)
  • 2 soft sandwich buns (brioche or whole wheat recommended)
  • Olive oil (for grilling)
  • Salt and black pepper, to taste
  • Optional toppings: lettuce, tomato, pickles, or onions

Directions

  1. Prepare the Chicken: Start by halving the 2 boneless, skinless chicken breasts lengthwise. This helps them cook evenly and more quickly, making them perfect for grilling. Season the chicken breasts with salt and black pepper on both sides to enhance the flavor. Drizzle with a little olive oil to prevent sticking and help with grilling.
  2. Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Place the seasoned chicken breasts on the grill and cook for about 5-6 minutes per side, or until they are fully cooked through and have an internal temperature of 165°F (74°C). During the last minute of grilling, brush the chicken with your favorite BBQ sauce, allowing it to caramelize slightly on the chicken.
  3. Assemble the Sandwiches: While the chicken is grilling, slice the sandwich buns in half and lightly toast them on the grill or in a toaster until they’re golden brown. This will add a nice crunch to the sandwich and help prevent the buns from getting soggy. Once the chicken is grilled and the buns are toasted, place a slice of mozzarella cheese on each chicken breast. Cover the grill for a minute or so to allow the cheese to melt perfectly over the chicken.
  4. Assemble the Sandwiches: Place the grilled chicken with melted mozzarella onto the bottom half of each toasted bun. Top with additional BBQ sauce if desired. Add any optional toppings, such as lettuce, tomato, pickles, or onions, for extra flavor and freshness.
