Instructions
1. Make the Tikki Tikki Sauce
- In a small saucepan, whisk together soy sauce, honey, pineapple juice, ketchup, vinegar, sesame oil, garlic, ginger, and sriracha (if using).
- Bring to a simmer over medium heat.
- In a small bowl, mix cornstarch and water. Stir into the sauce and simmer until thickened, about 2–3 minutes. Remove from heat and set aside.
2. Assemble the Skewers
- Thread chicken, pineapple, and bell peppers alternately onto skewers. Brush with olive oil and season lightly with salt and pepper.
3. Grill the Skewers
- Preheat a grill or grill pan to medium-high heat. Lightly oil the grates.
- Grill skewers for 10–12 minutes, turning every few minutes, until chicken is cooked through and lightly charred.
- During the last few minutes, brush generously with Tikki Tikki sauce and let it caramelize on the grill.
4. Serve
