Hawaiian Chicken Skewers with Tikki Tikki Sauce – Sweet, Tangy & Grilled to Perfection

Instructions

1. Make the Tikki Tikki Sauce

  1. In a small saucepan, whisk together soy sauce, honey, pineapple juice, ketchup, vinegar, sesame oil, garlic, ginger, and sriracha (if using).
  2. Bring to a simmer over medium heat.
  3. In a small bowl, mix cornstarch and water. Stir into the sauce and simmer until thickened, about 2–3 minutes. Remove from heat and set aside.

2. Assemble the Skewers

  1. Thread chicken, pineapple, and bell peppers alternately onto skewers. Brush with olive oil and season lightly with salt and pepper.

3. Grill the Skewers

  1. Preheat a grill or grill pan to medium-high heat. Lightly oil the grates.
  2. Grill skewers for 10–12 minutes, turning every few minutes, until chicken is cooked through and lightly charred.
  3. During the last few minutes, brush generously with Tikki Tikki sauce and let it caramelize on the grill.

    4. Serve
