- 4 chicken breasts, cubed
- 1 can (20 oz) pineapple chunks, drained
- 1 cup teriyaki sauce
- 1 red bell pepper, chopped
- 1 tsp garlic powder (optional)
- 1 tbsp cornstarch + 2 tbsp water (optional, for thickening)
Instructions
- Cube the chicken breasts into bite-sized pieces and add them to the slow cooker. The chicken will absorb all the flavors from the sauce and become perfectly tender as it cooks.
- Add the drained pineapple chunks to the slow cooker, along with the chopped red bell pepper and the teriyaki sauce. The pineapple adds a natural sweetness that balances the savory teriyaki sauce beautifully.
- If desired, add the garlic powder for an extra layer of flavor. It’s optional but helps to enhance the dish with a subtle aromatic kick.
- Cover the slow cooker and cook the chicken mixture on LOW for 5-6 hours or on HIGH for 3-4 hours, depending on your schedule. The chicken will become incredibly tender as it cooks, soaking up all the sweet and savory flavors from the sauce.
- If you prefer a thicker sauce, you can make a cornstarch slurry by mixing the cornstarch and water in a small bowl. Stir it into the slow cooker during the last 30 minutes of cooking, and it will thicken the sauce to your desired consistency.
