Grilling the Chicken
- While the vegetables are roasting, preheat your grill or grill pan over medium heat. Once heated, remove the chicken from the marinade and discard the marinade. Place the chicken on the grill and cook for 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is no longer pink in the center. The chicken should have nice grill marks and a juicy interior. If you’re using chicken thighs, they may take a bit longer to cook.
- Once the chicken is fully cooked, remove it from the grill and allow it to rest for a few minutes before slicing. Resting the chicken helps retain its juices, ensuring it’s tender and flavorful.
