Instructions
- Prepare the baking sheet. Line a baking sheet with parchment paper or lightly grease it. This will prevent the brittle from sticking and make it easy to remove once it’s hardened.
- Make the syrup mixture. In a medium saucepan, melt the butter over medium heat. Once the butter is melted, add the granulated sugar, heavy cream, and corn syrup. Stir to combine all the ingredients.
- Bring to a boil. Allow the mixture to come to a boil while stirring occasionally. Once it starts boiling, reduce the heat to medium-low and let it simmer for about 5 minutes, stirring constantly. The mixture will thicken slightly during this time.
- Remove from heat and add flavorings. Once the syrup has simmered for 5 minutes, remove the pan from the heat. Stir in the vanilla extract and baking soda. Be careful, as the mixture will bubble up slightly from the baking soda.
- Mix in the nuts. Add the salted peanuts and chopped pecans to the syrup mixture, stirring well to ensure that all the nuts are evenly coated with the caramelized syrup.
- Spread on the baking sheet. Pour the nut mixture onto the prepared baking sheet. Use a spatula or the back of a spoon to spread it out evenly into a thin layer. Let the brittle cool at room temperature for 1–2 hours until it hardens completely.
- Break into pieces. Once the brittle has set and hardened, break it into pieces by hand or using a knife. The brittle should snap easily into small, bite-sized pieces.
- Store and enjoy! Store the nut brittle in an airtight container at room temperature. It will stay fresh for up to a week, though it’s so delicious, it likely won’t last that long!
