Honey Garlic Roasted Chicken with Vegetables

Instructions

  1. Preheat your oven to 200°C (400°F). Allow it to fully reach temperature so the chicken begins roasting immediately and the skin crisps properly.
  2. In a bowl, whisk together the olive oil, honey, soy sauce, minced garlic, paprika, salt, and pepper. Mix until the honey dissolves into the oil and forms a smooth, glossy glaze. This mixture coats both the chicken and vegetables, helping everything caramelize while staying moist.
  3. Arrange the chicken legs and prepared vegetables on a baking tray or shallow roasting pan. Spread them out so the heat circulates well; crowding can cause steaming instead of roasting. Pour the honey garlic mixture evenly over the ingredients, then toss gently to ensure every piece is lightly coated.
  4. Roast for 45–50 minutes. About halfway through, baste with the pan juices by spooning the glaze back over the chicken and vegetables. This helps deepen the color, encourages caramelization, and prevents the chicken from drying out. The chicken is done when the skin is golden and the juices run clear, and the vegetables should be tender with lightly browned edges.
