Honey Lime Chicken and Avocado Rice Stack

INSTRUCTIONS

1️⃣ Marinate the Chicken

  1. In a medium bowl, whisk together the honey, soy sauce, lime juice, lime zest, olive oil, salt, and pepper until smooth.
  2. Add the chicken strips, tossing to coat them evenly. Cover and marinate in the refrigerator for at least 20 minutes (or up to 1 hour for deeper flavor).

2️⃣ Cook the Chicken

  1. Heat a skillet or grill pan over medium-high heat.
  2. Add the marinated chicken strips and cook for 3–4 minutes per side, or until golden, caramelized, and cooked through.
  3. Set the chicken aside and keep warm. Reserve any pan juices for drizzling over the finished dish.

3️⃣ Assemble the Rice Stack

  1. Use a round mold or small bowl to pack the cooked jasmine rice tightly.
  2. Invert the rice onto a plate to create a neat, compact stack.
  3. Layer the avocado slices evenly over the rice, followed by the honey lime chicken strips on top.
  4. Drizzle the reserved honey lime sauce from the pan over the stack for extra flavor and shine.
