Irish-Inspired Potato, Cabbage & Onion Stew

This simple yet satisfying dish draws inspiration from traditional Irish Colcannon, combining tender potatoes, sweet cabbage, and aromatic onion in a comforting stew-like format. Whether enjoyed as a light standalone meal or served alongside a protein, it’s rustic, nourishing, and perfect for cooler days. Add milk or cream for a creamy variation, or keep it brothy for a lighter finish.

Ingredients

  • 500 g (3 ⅓ cups) potatoes, peeled and diced
  • ½ small white cabbage (approx. 300–400 g / 3–4 cups), finely shredded
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 liter (4 cups) vegetable or chicken broth
  • 2 tablespoons butter or vegetable oil
  • 200 ml (¾ cup + 1 tbsp) milk or cream (optional, for a creamy version)
