1️⃣ Prepare the Pineapple Slaw 🥗
- In a mixing bowl, combine diced pineapple, shredded cabbage, grated carrot, red onion, and chopped cilantro.
- Add lime juice and coconut yogurt (or mayonnaise). Mix until everything is evenly coated.
- Season with salt and pepper to taste. Chill in the fridge while preparing the shrimp.
2️⃣ Season the Shrimp 🍤
- In a bowl, toss shrimp with olive oil, jerk seasoning, salt, and lime juice until evenly coated.
- Let marinate for 10–15 minutes for best flavor (optional).
3️⃣ Cook the Shrimp 🔥
- Heat a skillet or grill pan over medium-high heat.
- Add shrimp in a single layer and cook for 2–3 minutes per side until pink, curled, and slightly charred.
- Remove from heat and set aside.
4️⃣ Warm the Tortillas 🌮
- Heat tortillas in a dry skillet for 1–2 minutes per side or wrap in foil and warm in a 180°C (350°F) oven for 5 minutes.
5️⃣ Assemble the Tacos 🌟
- Place a few cooked shrimp on each warm tortilla.
- Spoon pineapple slaw on top of the shrimp.
- Garnish with extra cilantro and optional sliced jalapeño for added spice.
