Jerk Shrimp Tacos with Pineapple Slaw 🌮🍤🍍

👩‍🍳 Instructions

1️⃣ Prepare the Pineapple Slaw 🥗

  1. In a mixing bowl, combine diced pineapple, shredded cabbage, grated carrot, red onion, and chopped cilantro.
  2. Add lime juice and coconut yogurt (or mayonnaise). Mix until everything is evenly coated.
  3. Season with salt and pepper to taste. Chill in the fridge while preparing the shrimp.

2️⃣ Season the Shrimp 🍤

  1. In a bowl, toss shrimp with olive oil, jerk seasoning, salt, and lime juice until evenly coated.
  2. Let marinate for 10–15 minutes for best flavor (optional).

3️⃣ Cook the Shrimp 🔥

  1. Heat a skillet or grill pan over medium-high heat.
  2. Add shrimp in a single layer and cook for 2–3 minutes per side until pink, curled, and slightly charred.
  3. Remove from heat and set aside.

4️⃣ Warm the Tortillas 🌮

  1. Heat tortillas in a dry skillet for 1–2 minutes per side or wrap in foil and warm in a 180°C (350°F) oven for 5 minutes.

5️⃣ Assemble the Tacos 🌟

  1. Place a few cooked shrimp on each warm tortilla.
  2. Spoon pineapple slaw on top of the shrimp.
  3. Garnish with extra cilantro and optional sliced jalapeño for added spice.
