Lemon Cheesecake with Blueberries

Preparation

1️⃣ Prepare the Base

  1. Crush the cookies: Grind the graham crackers or oatmeal cookies until they form a fine, sandy consistency with no large chunks. A food processor works best, but you can also crush them inside a bag using a rolling pin.
  2. Mix the base: Combine the crumbs with the melted butter, sugar, and lemon zest. Stir until every crumb is evenly coated and the mixture resembles wet sand. The lemon zest releases fragrant oils that elevate the crust’s aroma.
  3. Press into the pan: Transfer the mixture to a 22–24 cm cake pan. Press firmly using the back of a spoon or the base of a glass to create a compact, even crust. A tightly packed base prevents crumbling once sliced.
  4. Pre-bake: Bake the crust at 175°C for 10 minutes until lightly set. Cooling it afterward helps create a stable foundation for the filling.
