Light Homemade Lemon Curd Christmas Log Recipe

4. Assemble the Log

  1. Place the cooled meringue rectangle on a large sheet of parchment paper. Spread a thin layer of lemon curd evenly across the surface of the meringue, leaving a small border around the edges.
  2. Next, spread the prepared lemon cream evenly on top of the lemon curd layer. The cream should cover the entire surface in a smooth, even layer.
  3. Carefully and tightly roll the meringue up using the parchment paper to help guide it. Be gentle to ensure the roll is compact but does not crack. Once rolled, wrap the log in plastic wrap and refrigerate for at least 2 hours to allow the flavors to meld and the log to set.

5. Decorating

  • Once chilled, unwrap the log and place it on a serving platter.
  • Drizzle the top lightly with additional lemon curd for a glossy finish.
  • Garnish with fresh lemon zest strips for a burst of color and citrus aroma.
  • If desired, add small meringue pieces for extra texture, and finish with a few sprigs of fresh mint for a pop of color and freshness.
