  1. Place the springform pan into a larger roasting pan and add hot water to the outer pan to create a water bath (about halfway up the sides).
  2. Bake at 350°F (175°C) for 25–30 minutes.
  3. Reduce oven temperature to 290°F (145°C) and continue baking for 2 hours.
  4. Turn off the oven and leave the cheesecake inside for 1 hour with the door closed to cool slowly.
  5. Remove from oven, cool to room temperature, then refrigerate overnight to set completely.

5️⃣ Make the White Chocolate Ganache

  1. Heat heavy cream in a small saucepan until just steaming (do not boil).
  2. Pour over chopped white chocolate and let sit for 1 minute.
  3. Stir until smooth and glossy. Let cool slightly before pouring over chilled cheesecake.
