Lobster Alfredo Pasta with Creamy Garlic Sauce

👨‍🍳 Instructions

1️⃣ Prep the Pasta

  1. Bring a large pot of salted water to a boil.
  2. Add fettuccine and cook until al dente according to package directions.
  3. Before draining, scoop out ½ cup of pasta water and set aside. Then drain the pasta and set it aside while you prepare the sauce and lobster.

2️⃣ Cook the Lobster Tails

  1. Use kitchen shears to butterfly the lobster tails: cut through the top shell lengthwise and gently pull the meat upward, leaving it attached at the base, then rest it on top of the shell.
  2. In a large skillet over medium heat, melt 2 tablespoons of butter.
  3. Add minced garlic and sauté for 30 seconds until fragrant.
  4. Place lobster tails shell-side down in the skillet and spoon the hot butter over the meat continuously as it cooks.
  5. Cook for 4–6 minutes, or until the lobster meat is opaque, plump, and lightly golden. Season with salt, pepper, a pinch of paprika, and chopped parsley. Remove from heat and keep warm.

3️⃣ Make the Alfredo Sauce

  1. In a separate skillet or saucepan, melt 3 tablespoons of butter over medium heat.
  2. Add the minced garlic and sauté for 1–2 minutes until soft and aromatic, being careful not to brown it.
  3. Pour in the heavy cream and bring to a gentle simmer. Let it cook for about 5 minutes, stirring occasionally, until slightly thickened.
  4. Reduce the heat and stir in grated Parmesan, salt, pepper, a pinch of nutmeg, and optional lemon zest. Stir until the cheese is fully melted and the sauce is smooth and creamy.
  5. Add the cooked fettuccine to the sauce and toss gently to coat. If the sauce is too thick, add a splash of the reserved pasta water to reach desired consistency.

4️⃣ Serve

  1. Divide the creamy fettuccine Alfredo between two plates or shallow bowls.
  2. Top each with a lobster tail, arranging it neatly on top of the pasta for a restaurant-style presentation.
  3. Spoon any remaining garlic butter from the skillet over the lobster for extra richness.
  4. Garnish with more chopped parsley and a little extra grated Parmesan, if desired. Serve immediately.
