1οΈβ£ Make the Tomato Bisque π
- Heat olive oil in a large saucepan over medium heat.
- Add chopped onion and garlic. SautΓ© for 3β4 minutes until softened and fragrant.
- Add canned tomatoes (with their juice), stock, salt, pepper, and a pinch of sugar if using. Stir and bring to a simmer.
- Simmer for 15β20 minutes, allowing flavors to meld.
- Use an immersion blender to puree the soup until smooth and creamy. Alternatively, blend in batches using a blender (carefully!).
- Stir in heavy cream and chopped basil. Adjust seasoning to taste. Keep warm on low heat.
2οΈβ£ Prepare the Lobster Grilled Cheese π¦π§
- Butter one side of each slice of bread.
- On the unbuttered side, layer cheese, chopped lobster, and optional greens like arugula or spinach.
- Top with another slice of bread, buttered side facing out.
- Heat a skillet or grill pan over medium heat.
- Cook each sandwich 3β4 minutes per side until golden brown and the cheese is melted. Press gently with a spatula while cooking for even browning.

- Cut each grilled cheese diagonally for classic presentation.
- Ladle tomato bisque into bowls. Garnish with fresh basil or a swirl of cream if desired.
