: Lobster Salad Croissant Rolls

  • 4 large croissants (fresh or day-old, sliced in half)
  • 1 tbsp unsalted butter (optional, for toasting the croissants)

Instructions

  1. Prepare the Lobster Salad: In a large bowl, combine the chopped lobster meat, mayonnaise, Dijon mustard, lemon juice, and smoked paprika (if using). Stir gently to combine, making sure the lobster is coated with the creamy dressing. Add the finely chopped celery and chives (or parsley) for a touch of crunch and freshness. Season the lobster salad with salt and black pepper to taste, and adjust the lemon juice or mustard if you prefer a bit more acidity or tang.
  2. Toast the Croissants (optional): If you prefer a toasted croissant, heat a small skillet over medium-low heat and add 1 tablespoon of butter. Lightly toast the cut sides of the croissants for about 1-2 minutes, until golden brown. This will add an extra crispy texture that contrasts nicely with the creamy lobster salad.
  3. Assemble the Croissant Rolls: Carefully spoon a generous amount of the lobster salad onto the bottom half of each croissant. Top with the other half to form a sandwich. You can also garnish with additional fresh herbs, such as parsley or chives, for a burst of color and freshness.
  4. Serve: Serve the lobster salad croissant rolls immediately, either as an elegant brunch option, a light lunch, or a show-stopping appetizer for parties. These rolls are best enjoyed fresh, with a side of crispy potato chips or a simple green salad.
