Mango Sticky Rice

Instructions

1️⃣ Prepare the Sticky Rice

  1. Start by rinsing the glutinous rice under cold water to remove excess starch. This will help ensure the rice has a tender, sticky texture once cooked.
  2. Soak the rice in water for at least 1-2 hours, or overnight if you have the time. This helps the rice absorb moisture, which is essential for creating the characteristic sticky texture.
  3. After soaking, drain the rice and steam it in a bamboo or metal steamer for about 30-40 minutes, or until it becomes soft and fully cooked. You can also use a cheesecloth or muslin cloth to line the steamer basket to prevent the rice from sticking.

2️⃣ Prepare the Coconut Milk Mixture for the Rice

  1. While the rice is steaming, combine the coconut milk, sugar, and salt in a small saucepan over low heat. Stir until the sugar and salt are completely dissolved, and the coconut milk is warm. Be careful not to let the mixture boil, as it can curdle or become too thick.
  2. Once the rice is done steaming, transfer it to a large mixing bowl. Pour the warm coconut milk mixture over the sticky rice while it’s still hot, and gently stir to combine. Allow the rice to absorb the coconut milk, then let it sit for about 10-15 minutes. This will give the rice time to soak up the flavors and become rich and creamy.

3️⃣ Prepare the Coconut Sauce

  1. In a separate saucepan, heat the coconut milk, sugar, and salt over medium heat, stirring to dissolve the sugar and salt. This will create the sauce that you’ll drizzle over the rice and mango.
  2. If you prefer a thicker coconut sauce, you can dissolve the cornstarch in a tablespoon of cold water and add it to the saucepan. Stir constantly as the sauce heats up until it thickens slightly, then remove from heat. If you prefer a thinner sauce, you can skip the cornstarch.
  3. Once the sauce is ready, remove it from the heat and let it cool slightly before serving.
