Instructions
Marinate the Chicken:
- Place the chicken breasts in a shallow bowl or resealable bag. Add 1 tablespoon of olive oil, lemon juice, minced garlic, dried oregano, a pinch of salt, and freshly ground black pepper.
- Mix well to coat the chicken evenly with the marinade. Let it sit at room temperature for 15 minutes to allow the flavors to penetrate the meat. If marinating longer, refrigerate for up to 1 hour, then bring to room temperature before cooking for even results.
Cook the Chicken:
- Heat a grill pan or skillet over medium-high heat. Lightly brush with oil if not nonstick.
- Place the marinated chicken on the hot pan and cook for about 6–7 minutes per side, or until the exterior is golden brown with light charring and the internal temperature reaches 75°C (165°F).
- Transfer to a cutting board and let rest for 5 minutes to retain juiciness. Slice into thin strips across the grain for maximum tenderness.
Prepare the Tzatziki-Style Sauce:
- In a small bowl, combine Greek yogurt, grated and drained cucumber, minced garlic, lemon juice, chopped herbs, salt, and pepper.
- Stir until creamy and well blended. Taste and adjust seasoning. Chill in the fridge until ready to serve to allow flavors to develop.
