Ingredients (Serves 8–10)
For the Beef Filling:
- 500g (1 lb) ground beef (or turkey/chicken)
- 1 tablespoon olive oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes with green chilies
- 1 packet taco seasoning mix (or homemade seasoning)
- 1/2 cup water (or beef/chicken broth for extra flavor)
- Salt and pepper to taste
For the Casserole:
- 8-10 flour tortillas (depending on size)
- 2 cups shredded Mexican blend cheese (or cheddar, mozzarella, etc.)
- 1 cup sour cream (optional, for extra creaminess)
- 1 cup salsa (optional, for a little extra zest)
Instructions
- Start by preparing the beef filling. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the diced onion and cook for about 3 minutes, or until the onion becomes soft and translucent. Add the minced garlic and sauté for another 1 minute until fragrant. This creates a flavorful base for the beef mixture.
- Add the ground beef (or turkey/chicken) to the skillet, breaking it apart with a spoon as it cooks. Cook for about 5-7 minutes, or until the meat is browned and fully cooked through. Drain any excess fat from the skillet, then stir in the can of diced tomatoes with green chilies, taco seasoning, and water (or broth). Stir to combine everything and let it simmer for about 5 minutes to allow the flavors to meld together. Taste the mixture and adjust the seasoning with salt and pepper if needed.
- While the beef mixture is simmering, preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with cooking spray or olive oil to prevent the casserole from sticking to the pan.
- Once the beef mixture is ready, it’s time to assemble the casserole. Start by spreading a thin layer of the beef filling on the bottom of the greased baking dish. This will create a savory base that keeps the tortillas from sticking to the bottom. Layer 3-4 flour tortillas on top of the beef mixture, cutting or overlapping the tortillas if needed to fit the size of your dish. The tortillas will form the foundation of the layers in the casserole.
