Ingredients (Serves 8–10)
For the Beef Filling:
- 500g (1 lb) ground beef (or turkey/chicken)
- 1 tablespoon olive oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 packet taco seasoning (or homemade seasoning)
- 1/2 cup water (or beef/chicken broth)
- Salt and pepper to taste
For the Casserole:
- 8-10 flour tortillas (depending on size)
- 2 cups shredded Mexican blend cheese (or cheddar, Monterey Jack, etc.)
- 1 cup sour cream (optional, for serving)
- Fresh cilantro, chopped (optional, for garnish)
Instructions
- Start by heating the olive oil in a large skillet over medium-high heat. Add the diced onion and minced garlic, and sauté for about 3-4 minutes, or until the onion becomes soft and translucent.
- Add the ground beef (or turkey/chicken) to the skillet and cook, breaking it apart with a spoon, until the meat is browned and cooked through. Drain any excess fat if necessary.
- Stir in the diced tomatoes, taco seasoning, and water (or broth). Bring the mixture to a simmer and cook for about 5-7 minutes, allowing the flavors to meld together. Season with salt and pepper to taste. Once the mixture is well combined and thickened, remove from heat.
- While the beef mixture cools slightly, preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with non-stick spray or a small amount of olive oil.
- To assemble the casserole, start by spreading a thin layer of the beef filling on the bottom of the prepared baking dish. Then, place a layer of tortillas on top, cutting them to fit if necessary. Repeat this layering process, adding layers of beef filling, tortillas, and cheese until all ingredients are used, ending with a layer of cheese on top.
