MEXICAN TORTILLA CASSEROLE

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray or oil.
  2. Cook the Meat and Vegetables:
  • In a large skillet, cook the ground beef or turkey over medium heat until browned and cooked through. Drain any excess fat.
  • Add the diced onion, minced garlic, and diced bell pepper to the skillet. Cook for 3-4 minutes, until the vegetables are softened.
  1. Add the Beans, Tomatoes, and Seasonings:
  • Stir in the black beans, diced tomatoes, frozen corn kernels, chili powder, ground cumin, paprika, salt, and pepper. Cook for an additional 5 minutes, allowing the flavors to meld together. Taste and adjust seasoning as needed.
  1. Assemble the Casserole:
  • Spread a layer of the meat and vegetable mixture on the bottom of the prepared baking dish.
  • Arrange half of the corn tortilla strips over the meat mixture.
  • Sprinkle half of the shredded cheese over the tortilla strips.
  • Repeat the layers, ending with a final layer of cheese on top.
