👩🍳 Instructions
1️⃣ Prepare the Casserole Filling
- Preheat the oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
- In a large skillet, cook the shredded chicken or ground beef over medium heat until fully cooked, then drain any excess fat if necessary.
- Stir in taco seasoning and mix well to evenly coat the meat.
- In a separate bowl, combine the cream of chicken soup, undrained Rotel tomatoes, sour cream, and milk. Stir until smooth and well combined.
- Add the creamy soup mixture to the cooked meat and stir to combine.
2️⃣ Assemble the Casserole
- Spread a layer of crushed Doritos at the bottom of the prepared baking dish.
- Top with half of the meat and sauce mixture, spreading it evenly over the chips.
- Sprinkle 1 cup of shredded cheese over the meat mixture.
- Add another layer of crushed Doritos, followed by the remaining meat and sauce mixture.
- Top with the remaining cheese for a melty, golden topping.
3️⃣ Bake
- Bake the casserole in the preheated oven for 20–25 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
4️⃣ Serve & Enjoy
- Remove from the oven and let cool slightly before serving.
- Serve hot with a side of Mexican rice, a salad, or more crushed Doritos for extra crunch!
