Mexican White Trash Casserole 🌮🧀 – A Cheesy, Flavor-Packed Comfort Dish

👩‍🍳 Instructions

1️⃣ Prepare the Casserole Filling

  1. Preheat the oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  2. In a large skillet, cook the shredded chicken or ground beef over medium heat until fully cooked, then drain any excess fat if necessary.
  3. Stir in taco seasoning and mix well to evenly coat the meat.
  4. In a separate bowl, combine the cream of chicken soup, undrained Rotel tomatoes, sour cream, and milk. Stir until smooth and well combined.
  5. Add the creamy soup mixture to the cooked meat and stir to combine.

2️⃣ Assemble the Casserole

  1. Spread a layer of crushed Doritos at the bottom of the prepared baking dish.
  2. Top with half of the meat and sauce mixture, spreading it evenly over the chips.
  3. Sprinkle 1 cup of shredded cheese over the meat mixture.
  4. Add another layer of crushed Doritos, followed by the remaining meat and sauce mixture.
  5. Top with the remaining cheese for a melty, golden topping.

3️⃣ Bake

  1. Bake the casserole in the preheated oven for 20–25 minutes, or until the cheese is melted and bubbly and the casserole is heated through.

4️⃣ Serve & Enjoy

  • Remove from the oven and let cool slightly before serving.
  • Serve hot with a side of Mexican rice, a salad, or more crushed Doritos for extra crunch!
