Mocha Cheesecake Cake

Instructions

1️⃣ Cheesecake Layer

  1. Prepare the pan: Preheat the oven to 325°F (163°C). Grease a 23 cm springform pan thoroughly and line the bottom with parchment paper to ensure clean release after baking.
  2. Beat cream cheese and sugar: In a large bowl, beat the softened cream cheese with the granulated sugar until smooth and free of lumps. This step guarantees a silky cheesecake texture.
  3. Add eggs: Add the eggs one at a time, mixing just until incorporated after each addition. Overbeating can introduce too much air, so mix gently.
  4. Add remaining ingredients: Mix in the sour cream, vanilla, and dissolved instant coffee. Continue mixing until the batter is smooth and uniform in color.
  5. Bake: Pour the cheesecake batter into the prepared pan and bake for 45–50 minutes. The edges should be set while the center remains slightly jiggly.
  6. Chill: Allow the cheesecake to cool completely in the pan, then refrigerate for at least 4 hours, or overnight, to fully firm up and make assembly easier.
