1️⃣ Soak the Cornmeal:
- In a bowl, combine the milk and cornmeal. Stir well and let the mixture rest for 20 minutes. This helps soften the cornmeal and creates a tender cake texture.
2️⃣ Blend the Batter:
- After soaking, transfer the cornmeal mixture to a blender.
- Add the eggs, oil, and sugar. Blend for about 5 minutes until the batter is smooth and creamy.
3️⃣ Add Final Ingredients:
- Add the grated coconut or cheese and the baking powder to the blender.
- Pulse just a few times to combine — avoid overmixing to preserve airiness.
4️⃣ Prepare the Pan & Bake:
- Grease and flour a 22cm (9-inch) round baking pan or line with parchment paper.
- Pour the batter into the prepared pan and tap gently to release any air bubbles.
- Bake in a preheated oven at 180°C (350°F) for 35–45 minutes or until the top is golden and a toothpick inserted into the center comes out clean.
