1️⃣ Toast the Pecans (Optional but Recommended):
- Preheat oven to 350°F (175°C). Spread chopped pecans on a baking sheet and toast for 6–8 minutes until fragrant. Let cool completely.
2️⃣ Make the Filling:
- In a medium bowl, combine the brown sugar, corn syrup, melted butter, vanilla extract, and cinnamon. Add a small pinch of salt if desired to balance the sweetness.
- Stir in the chopped pecans until fully coated in the mixture. The texture should be thick and slightly sticky.
3️⃣ Chill and Shape:
- Place the mixture in the refrigerator for 30–60 minutes to firm up. This will make it easier to roll into balls.
- Once chilled, use a small scoop or spoon to portion out and roll into 1-inch balls.
